Nidos being run as a special attacker isn't just for coverage. It's also because Poison Jab would be the main STAB, which is pathetic for a Poison type physical attacker. Plus no Ground type move other than Bulldoze to be Sheer Force boosted, which isn't great.
If GF wanted to do right by NIdo they'd either swap Atk and Sp. Atk, or give it Gunk Shot + a Ground type attack stronger than Bulldoze to get boosted.
