Birds.It's not impossible to use as a basis, but you have to basically create a culture for the humans from scratch, preferably without stepping on Alola's toes which already tackled some themes of living in a country with lots of tourism, and then you have to insert all the monsters and nature in the sorts of varied locales that you can and (in the majority of possible cases) can't find on the islands... but at that point you may ask why use Galapagos as the basis at all.
