Press enter/c on it and you can select your type
As for how it works, It seems to just randomly swap your encounters/starter for a pokemon in a generally low bst monotype pool of about ~10 or so for each type, for earlygame, at least
Best way to go about it is probably
>Pick your type>Get a couple of the encounters on route 1>Turn it off and play normally until you want to get more
