Generation 8 is called Pokémon Infinite (the number 8 is incorporated into the logo as an infinity symbol). There is only one game because it is being designed as a "console experience". The concept of dual versions has been put on hold because it is not considered likely every player will have their own Switch the way previous handheld games have encouraged.
The game takes place in a new region during the reconstruction of a natural disaster. The region is still trying to return water, electricity, heat, etc to affected towns and cities. These resources all match up with a Pokémon type.
When you travel to towns, you begin that town's unique quest. Each town is affected a different way (no water, electricity, no heat) and you must complete the town quest to restore that utility to the people. Gym leaders act as mayors or governors and will not accept challenges until the needs of their town have been met.
The player can travel to every town in almost any order. Some parts of some towns are inaccessible until other quests have even completed. The player's path brings utility back to affected towns and helps return them to normal.
The map is designed so you can watch everything build back up over time. The game is always changing in small ways as you progress through quests.
