It could be to buff a pokemon, to build lore or just for giggles.
Here is mine:
Alolan Crustle (Bug/Grass, just for the lore)
Dwebble came as a stowaway to Alola, where it (once evolved) couldn't find boulders to make its home. Therefore it resorted to build one out of plant parts (such as vines, moss, twigs, etc.).
As a result it is now much faster, but has a lower defense
