Ignoring Title Defense though, Toxapex would fit perfectly into Roxie's Venoshock strategy team, so that was my first idea. Roxie is the only trainer in the series that I can recall that has Venoshock as her specific strategy. Even Plumeria's mono-poison Title Defense team doesn't have a single Pokémon with Toxic or Venoshock.
Both her signature Pokémon are not in any of Plumeria's teams either. There's been much egregious type overlaps in the past. Just look at Clair and Lance, both even using the same dragon line.
Scolipede also had its ability swapped to Speed Boost as of Gen 6, so that'd be pretty unique and neat to battle against. If you wanted to go all out with egg moves, then Protect + Toxic Spikes could make Roxie a pretty challenging fight, but this is pretty strong wish fulfillment, even in the Battle Tree it'd admittedly be a bit of a stretch for them to lead like that. Although that being said, those Towers have been known to pull out some unexpected stuff before. Obviously I wouldn't expect something like that during the main game though.
Muk is obviously one of the most exciting Alola forms, although its a shame we didn't get an Alolan Koffing/Weezing or Whirlipede instead to further her connection and incentive to come to Alola (besides what I previously suggested about being on tour/a part of a Ryuki side story that we never got), but I could definitely see her with one of these.
