It's true that Pokemon is made to be a simple RPG, but I think difficulty makes a game immersive. Makes a kid to find solutions, and give them that nice sense of accomplishment that you get when you overcome a challenge. Makes a kid to ask their friends, search through the sea of information that now is Internet. Makes a kid to say to his friend "thanks, buddy" if a friend helps to overcome a difficult challenge, instead of making challenges easier. The same "Jolly Cooperation" I like so much from Dark Souls.
People value more the things they have when they're difficult to get. Spoonfeeding them is to deny them that nice sense of accomplishment we had when we played the older games, and what's worse, makes children to get used to be spoonfed their entire lives.
In my personal case, videogames helped me a lot to form myself a mindset of "everything has a solution, even if it doesn't appear there at first sight". It's even cruel to deny children that positive aspect of videogames by giving them everything in a silver plate.
