I'm aware horseshoe crabs exist, but the issue with this concept is that now you have to explain why every single fossil Pokemon has been rock type, except Gen 8 where it's clear you're merging two Pokemon together and therefore you can throw away the rock typing temporarily.
I could explain this as "oh, the species was revived and the ones they find are misidentifications," but there's really no evidence for that, is there? It's a good logical deduction, but it could still be wrong.
