The real answer is because the sinnoh games were the first for a lot of people who are now legal adults. Personally I'd say sinnoh's pokemon distribution is wonky and leaves a good bit to be desired, but its level curve is sufficiently difficult for the game to have some level of challenge. The biggest problem with the sinnoh games aside from lackluster pokemon distribution is that gamefreak was obviously unfamiliar with the ds technology, as evidenced by the rather flat and boring sprites, horrendous save times (saving a lot of data), and what I can only describe as the games being a bit 'clunky'. Notice however that the technical problems with were ironed out by HGSS, and while those games have their own problems, they're symptoms of johto's level curve being absolutely fucked (more than a few level spikes in some places, while everything is super underleveled elsewhere). I'd love sinnoh remakes to see the region on stronger hardware with the experience on said hardware given by Lets go and SS, but at the same time I worry for them making the game easier while not addressing the general lack of wild pokemon variety.
