Snorlax plays into it's theme of laziness and gluttony by having scraps left over in its fur grow large just as it does. They lean further into both the machinery and space them for Orbeetle by making its head a massive UFO that can project mind control. Alcremie goes from whipped cream to wedding cake, Rillaboom gets a forest drumset, Inteleon gets a sniper tower via its tail, Sandaconda build upon its shape and goes from sand shotgun to sand tornado, Garbodor changes in the same vein as Snorlax in that the little pieces of trash blow up along with it, etc. They're just not "what would (x) look like if BIG", they're evolutions of the Pokemon's foundation unto their own, just like Megas were to an extent.
Megas like Eevee or Pikachu, which are just exaggerations of traits with a loose reference here of there, aren't much different from megas like Swampert or Pidgeot.
