Lana was important not because she has an Eevee, but because it's relatable to Koharu. Just like with Lillie's Vulpix, it has the ability to evolve, yet it hasn't. It's not literally about its evolutions, Eevee is an extension of Koharu's character and her indecisiveness to "evolve". Lana's Eevee sprung about a natural conversation about what it means to "stay" as an Eevee. Professor Sakuragi said it right at the end, if she comes to a crossroad, follow whichever path resonates with her. That's what makes it so beautiful. This whole time she, and we as the audience, have been seeing evolution as something concrete that has to be chosen with consideration, but "staying as an Eevee" means staying true to yourself, no matter which path you choose. Lana's is on her own path, and likewise so is Koharu's, but also everyone else's. Each Eeveelution they came across had its own story that culminated to them evolving, but their story was never about the evolution itself. The Flareon and Jolteon episode even highlights this by showing that it's not the evolution that matters, but the Eevee inside it. Koharu and Eevee's story was always about not getting lost in expectations and being true to yourself and the desires that stem from that. Even Sakuragi's story this episode was relevant. He started out young and slowly evolved into a great person fueled by the self. The story is about how if you forge your own journey your destination will come naturally. There's no need for Koharu to worry about finding a destination, and that realization opened her up to finding her own path.
