Unfortunately I haven't seen many sprite redraws of new pokemon game towns, but people make them for gen 1-3 a lot.
I think malie city itself would be peak soul in 2d
Ballonlea and laverre would be good too, and I think konikoni city looks boring in 3d but would be improved greatly just by being 2d
