If you're gonna make a SubSeed set, I'd totally recommend putting EVs in both defenses and not in HP, so you can maximize the health gains. It's not as frail as you think, although any reasonably strong neutral hit will break a sub. It doesn't matter if you know what you're doing, though.
And on the offensive side of things, Moonblast, Giga Drain/Energy Ball, HURRICANE, decent coverage, Infiltrator, Prankster gains from Sunny Day/Growth, quite a few options, really.
