Space to run from aggressive encounters, separation from other encounters so when you do initiate battle, you're far less likely to get 5 wild attack gangbangs but you can still have them if you want, further render and spawn distance, and a general properly large open world, they all crush SV's weirdly touristy world where every corner has to spawn a dozen Pokemon at any given moment within a tiny radius so you trip over every Scatterbug in the grass unless you have your head pointed at the ground 24/7.
The breathing room from PLA's world design is intentional and aids in the more freeform movement in the game whereas SV's world design falls into a mishmash of junky Veluza spam, midget mon stumbles, and occasionally decent areas of lower spawns that slow you to take advantage of the heavily-encouraged ride mechanics.
Is the space sometimes too much? Sure. But I'd take the empty space and more isolated wild encounters to whatever lack of world design was happening in SV.
