In the anime when you get down to it, they're just a flashy cool things they can show off for sakuga. I can maybe see what you're saying about it making battles predictable, only as far as the trainers almost always save it for the final matchup, but how it's not like they didn't follow that structure from before any of these existed. Like Gary's obvious ace was Blastoise or Drake's obvious ace was Dragonite and everyone over the age of 3 going into those battles knew those were going to be the main focus at the end of the match.
