You could still adjust your hold item, your nature, and your EVs/IVs. All pretty decent so far. Now, strap yourselves in for this one: the gym leaders did not have to declare anything. Their team composition could change on a whim. Battling them, you were rarely going to see the same Pokemon twice. For double or triple battles, you might see the same strategy, but things were always tweaked to give you an edge. You may notice the statement "for double and triple battles" and think "Oh, some of the gym battles change the format, right?" Yes and no. It's not that some leaders are exclusively singles and some exclusively doubles.
