There is some more story stuff with Team Rocket, and you can battle all the Johto gym leaders throughout. The Sevii Islands are moved to post-game which have lots of challenges, but the last 4 haven't been added yet unfortunately. Even though you're playing the CPU, they're given loads of BS to keep up so it's a challenge. Though if you're playing on Minimal Grinding Mode and don't use items there really is no "Easy" mode, which definitely gatekeeps some more casual peeps unfortunately.
For you I'd recommend Unbound if you haven't player it already, only hack I like even more than RR.
