All of the 48% dishes are pretty challenging to make, with the strange exception of "Calm Mind" Fruit Salad which only needs three kinds of ingredients. Two of them being Apples and Honey also happen to be gathered by the Go Plus+ Sleeping Cap Pikachu, and are bedtime stamp card rewards.
"Inferno" Corn Keema Curry notably can have all of its ingredients gathered by a pair of level 60 Dragonite and Tyranitar with specific ingredient spreads (Herbs, Sausages, Corn, Ginger).
Later on when you have a 78 capacity cooking pot, this will likely be an end-game strategy for curry weeks.
"Explosion" Popcorn like you say is a really good one to make on desserts weeks, given that you only need 7 milk so you can focus on corn and oil gathering instead.
"Dream Eater" Butter Curry is also a good one to make, as a combination of Blastoise and Victreebel can gather everything needed. I'm often running Blastoise on Lapis Lakeside because of this.
The typical strategy with the hardest to make dishes, is to pay attention to your ingredient usage during the week and see what you can save up for Sunday cookouts, where the biggest payoffs might happen.
