They are called again evolutions and not age. Homo sapiens is the latest stage in human evolution(if one wants to believe in human evolution), and despite it being the most recent evolution, there are babies, children, teens, adults, and elderly human sapiens. Homo erectus was a previous human evolution and also had young to old of its kind. We don't view homo erectus as children just because they are a previous evolution than us, we just view them as less advanced and distinct from us. The Pokemon franchise is just lazy in showing us varied ages within each evolutionary stage. A good example of a first-stage evolution that was portrayed as old was the pikachu in the episode 'The Pi-kahuna'. A mature Braixen can exist, just like an immature Delphox can.
