I actually just built a Normal mono-type team using Pokemon I could easily get in Ultra Sun. Went the extra mile and went pure Normal only, no secondary types allowed.

I love my normies but I haven't tried them in battle yet. Team probably sucks but it was fun to build.
I'd definitely specialize in normal types. I've done a number of Monotype runs in-game and Normal is the most fun to do. It's probably my favorite type over all
