Straight femanon here. We'd go to the Canalave Library and l'd listen to all her theories on Pokemon mythology. After that, we'd go to Amity Square and let our Pokemon play with each other while we talk about how we met each of our Pokemon. Then I'd take her to a nice restaurant in Sunnyshore City for dinner and then watch the sunset on top of my lapras by the beach.
