While not strictly an eeveelution, I like the Mega Eevee from Insurgence, even if the rest of that game is a mess. The rundown is that besides the usual Mega Evolution stat boost, Mega Eevee gains the "Protean Maxima" ability, which makes it so that whenever it uses a move with a type that matches an eeveelution, it turns into it, including stats and ability.
