Let's talk about pokemon breeding. Take Togepi for example, a pokemon born from an actual egg that uses its eggshell to protect its body. Togepi take a longer time to hatch than most pokemon eggs, because unlike most mammalian pokemon eggs it is an actual egg, meaning the baby Togepi can grow safely and get the nutritients it needs from the egg.
Something to remember is that every pokemon is different, and there are so many that not all of them have been researched fully yet. But it stands that a majority of pokemon eggs aren't really eggs at all.
