I'm calling it: the game will put a lot of focus on Pokemon as mounts. They tested the waters in Legends, and it would make sense with the new full open world.
Diving into speculation, it would even deepen the "past and future" theme. The "traditions vs progress" angle would be exemplified in the way people approach Poke-Riding. Koraidon and Orange School would be themed after good old wheels and roaring motors, focusing on style and skill and being one with mount and road (Koraidon does give me massive 50's greaser biker vibes). On the other hand, Miraidon and Purple School are about scientific precision, technological aids, and pure performance.
