Doing it everything in one day like I think you are suggesting would be very hard, almost impossible even. It's one thing if it is a IRL tourney but on a online one you have to consider timezones and shit. That's not to say that the tourney should last 3 months each round either. 1 or 2 weeks for the thing to get done seems like a fitting timeframe.
I do agree that coordinating things will be easier on a chat. The one time I saw a tourney here on /vp/ they tried to keep everything on the thread and it was basically a phantom thread with people posting every 10 minutes if X was here and then X replying 5 hours later and by that time the person who originally asked was not there anymore. It would get rid of the people actually wanting a group too and creating it for this is not a bad excuse either even if down the road it'll become a general chat where we sometimes talk about Pokemon.
