The art of Pikachu has changed over time as well, and I really hate it when they give pikachu a square 5-head or when they make Pikachu's neck look disgustingly thin to make it look more anthro.
Even despite it being called the electric "mouse" pokemon, parts of its design were based off of squirrels. It only makes sense that its design looks better when it looks more "chubby" and animal-like than when they try to make it look "chibi" and screw around with its proportions.
Maybe that's why I like the Detective Pikachu movie, even though it was Tim's dad all along it was still nice to have a main Pikachu be sassy again.
As for being shoved down everyone's throats too much, absolutely. Mimikyu is kind of a self-aware jab at that, which is why I love Mimikyu.
