If you're still interested in giving it a shot, give Uruguay, Belize, or Guam a look. There's not really a huge amount of restrictions or anything, just use a black outline, and, if you can, something fun or reflective of the country/flag, like a soccer ball, or a tiny hurricane on their top, or something like that.
