Ice cream is overall a fun thing to base a Pokemon off of.
It makes me smile when I use it; It has a lot of neat design aspects that stand out like the happy face on its back, the straw, its snow/icicle body, and how Vanilluxe by default has a cheery expression on its face. I never regret choosing Vanilluxe, even if it performs poorly.
