Even those accomplished in their careers (or even hobby) learn to adopt different methods, experiment and adjust a few things in their style.
That's the thing many fail to realize is that those would-be illustrators waving the "It's my style" flag just don't want to admit that they're just comfortable drawing the same way constantly because it's safe and they consistently have something at a time they can control. They might stick to a schedule, but I doubt they're happy.
I do agree though, realism isn't so much the goal so much as it's a means to an end. Everyone can learn something from it, even if they just want to do a cartoon or manga style.

Personally, I find the term illustrator is a more suiting label. Artist serves fine as a blanket term, but it seems to imply a greater responsibility with the subject matter if not rile up those protective of their craft if one artist is more interested in drawing pin-ups of sexy cartoon ladies as opposed to creating something with deeper meaning and esoteric appeal.
