From figuring out the best ways to make cash while on the go, a growing number of Pokemon she rotates around based on what she needs for the journey ahead, and well, just how her personality sticks out from the variety of people she meets along the way. Fairly simple!
I imagine there would be moments along the journey where one character from early on in the story comes back for a bigger role, or a chain of events leads to a major story shift. But the core of it is exploring people, Pokemon, and how they live together across different locations throughout the world.
There could even be Kazuki episode specials that are sold on the Blu-Rays, featuring his own rise to power as the leader of his villain team. While him and Ming-Ming may meet each other and clash over different ideals, by the end of the day... Who knows ultimately where their lives may lead each other.
