Apply toxic asap then use moonlight to heal up if you need to. Your other two moves are curse and payback. Curse is an egg move which you need to breed for and will give you a boost to attack and defense at the cost of speed. Payback is a physical move with a base damage of 50 and deals double damage if you move second.
Umbreon is a fantastic wall capable of sweeping like a motherfucker if you switch him in at the right time or give him set up. The only thing is two major issues which put him in an awkward position the first of those obviously being the type weaknesses dark. He is also very reliant on damage from toxic until you can use curse a few times. Additionally since I personally choose to put EVs in Def rather than SpD and curse doesn't boost SpD that can lead to some potential issues if they have like lets say a Volcarona with Bug Buzz or a Mega Gardevoir. You could put EVs into SpD rather than Def however at the point you might as well just use a different pokemon all together.
That being said if you do put him in at the right time or while you opponent is trying to set up all it takes is single curse to start your snowball. If they've got like a shit lot of entry hazards and a baton passed in sweeper it often times doesn't matter because by that point you've stacked curse a ton meaning your 'not very effective' paybacks are going to be chunking health.
