If anything, with Serena doing Pokemon-Amie and promoting PokePuffs like they have been with her, they can use her to promote it since it's the only way to get a Sylveon and maybe some future Pokemon to evolve, so she still stays somewhat relevant. Plus the whole "not having a goal and searching for one" fits pretty well with her having a reason to continue with Ash, going around and seeing the world to see what goal would work for her. All she needs is to be a bit more active in battling and Pokemon catching and it'd be set.
