If you're willing to stretch this far for Decidueye and Serperior who resemble extant animals far more than any extinct species than the theory is essentially non falsifiable. Every single animal has extinct counterparts because that's literally how natural selection works, so unless Gamefreak decides to make a fucking objectmon starter you're going to be able to find some extinct animal to fit your pattern. Grookey could literally just evolve into a bigger Grookey and you people would claim it's a Gigantopithecus or some shit.
Meganium, Sceptile, Torterra, and Chesnaught are all clearly at least partially inspired by extinct animals. Venusaur is debatable. Serperior and Decidueye have no more in common with extinct species than they do living ones.
