My understanding of the apologist rationale and my rebuttals:

While I might be on the fence about whether or not Dex cuts need to be made, the reason for doing so (better graphics and animations) isn't compelling. I really don't see the reason to reinvent the wheel unless Murphy's Law was in effect. The stuff from the trailers makes me doubt that Game Freak made any reworks or improvements on the models and animations respectively.
The only other reason Game Freak would remake the models is to make the models look less ugly when they're upscaled via Dynamax. That brings up a big counterargument, though: Why would they cut out parts of a critical feature (the Pokemon themselves) to satisfy a gimmick that will likely be abandoned next gen?

We have seen evidence based on the models from Sun&Moon and Let's Go, and compared them to the trailers. I find it hard to believe that Game Freak would need to remake some models.
However, it is true that evidence=/=proof. Until the datamining occurs, we can't jump to conclusions. The evidence may be enough to doubt Game Freak and justify not buying a game, but it's not enough to justify heated castigation.
