As you can see from the comments above you about Sableye and video evidence you really have little to no options to stop Sableye 1v1.
Best counter is if a team has 2 or more mons with stuns & those 2 or mons are dedicated to shutting down Sableye while the remaining 3 handle the rest of the enemy team.
