I wouldn't suggest a crock pot bc lol hot liquids in a moving vehicle, but what about a small pressure cooker? Can't imagine it's that electrically demanding, plus it's small, affordable, a locking lid. Even if all you keep is beans and rice for when you can't hit the grocery store, peppers, garlic and onions can keep for a while no problem to upgrade it to jambalaya, and properly smoked meats last forever. Make your own all-in-one seasoning shaker on your day off and pack enough to last until you get back, it's way quicker than meal prepping for an entire month.
