When a game wrinkles, they add a new mechanic to the game that could alter how the game plays, such as Mega Evolution and Z-crystals, or even Double Battles in Gen 3.
When a game irons, it makes a small adjustment to fix the problems of the original game, without changing the base too much, such as the Gen IV Physical-Special split, or balancing Psychic and Fighting in Gen 2 by adding Steel and Dark, or balancing Dragon in Gen 6.
I think I found Sun and Moon so lackluster because after adding a major wrinkle to the game- Mega Evolutions- they quickly added another wrinkle even though the previous wrinkle is in major need of ironing.
