While refreshing in terms of region, Alolan forms and shaking up the gym formula by trying something new they are flawed to hell in terms of almost everything else. Story is the same formula we've had since Gen 3. Online functionality is worse even though Gen 6 perfected how easy it was to get into online play quickly. The difficulty is still insultingly low even for Pokemon. Post game is lacking once again. The national dex has been removed entirely. I can go on.
Ultra Sun and Moon are probably some of the worst "definitive versions" GF have ever made. Extremely low effort with barely any new features to bring players from SM back and not feel ripped off. Only worthwhile addition is Rainbow Rocket and it's not exactly worth playing full price for. USUM are worth playing if you've never played SM but if you're a Pokemon fan you most likely have.
I assume you aren't attempting to defend Let's Go because defending simplification of an already extremely simple RPG series is pretty fucking retarded. And I'd assume anyone defending those games hasn't played Pokemon since the 90s. It takes almost all of the issues SM has and turns them up to 11. Whether you agree it's a "mainline" game or not doesn't really matter, it's shit either way.
So overall there is one set of games worth playing this generation, and they're decent fun at best and annoyingly mediocre at worst. Yeah dude what a great generation, how could I have been so blind.
