You're neglecting that even though they chose "looks" they continuously sacrificed functionality.
Gen 6 maybe had an excuse, because it was the first 3D gen and they didn't know any better. But Gen 7 was already a step downwards in every conceivable way yet they didn't even bother to try and make them look or run any better. They ran WORSE.
Pic related, it looks fine and you never would have noticed the fact it was low poly on the 3DS. Stop defending GameFreak's shit optimization and treatment of the series that started after Gen 6.
