It's basically a limit break. When Charmander evolves into Charmeleon and then Charizard that's three new pokemon three new species. Plus the evolutions are permanent.
When Charizard mega evolves into Mega Charizard X or Mega Charizard Y, it's going super saiyan. It's a temporary boost in power, and once the battle is done it goes back to being a Charizard. In otherwords it goes from Charizard to Charizard Deluxe and then back again.
