This is why you don't really stop looking for good ingredient farmers, there are valid reasons to use both mono-ingredient farmers and diverse ingredient farmers.
Mono-ingredients are great for stockpiling a single ingredient you're short on to last several days.
Diverse ingredients are great for staying on the team for a steady supply of important ingredients for key dishes (Victreebel with Tomatoes and Potatoes is a strong example of that).
