The wild Pokémon diversity has been vastly changed, and Pokémon that were previously locked to post-game or in-game trades are now available in the wild in Johto, or in the Safari Zone off Route 48. The only exceptions being Porygon, Chansey, the fossils, Snorlax, the Kanto starters and most legendaries. Magnezone, Leafeon and Glaceon are also post-game locked due to them evolving on Route 10, Viridian Forest and Seafoam Islands respectively.
All regional forms of Pokémon that appear in the Dex are available before post-game via in-game trades, similar to how they were handled in LGPE. For example, you can trade a Johtonian Wooper for a Paldean Wooper with a girl in Violet City, or a Johtonian Corsola for a Galarian Corsola with a woman in Olivine City. Evolution methods may have been altered or simplified to make the regional forms' inclusion in the game better.
After driving Team Rocket out of Goldenrod City, you will be given a GS Ball by a Kimono Girl, and if you take it to Kurt a cutscene very similar to the one in Crystal will play, where you will be able to catch Celebi. If you have a completed save file of Legends: Arceus on your Switch, and you take Celebi back to its shrine in Ilex Forest after catching it, it will trigger a cutscene where it offers to take you to certain locations in Hisui. It seems the various Hisuian forms/evolutions are causing trouble in Hisui, and it is your job to stop them. These events seem to take place just before the events of Legends: Arceus. You will be able to battle and catch the various Hisuian forms/evolutions, and you can come back here any time to attempt to catch them if you accidentally knock them out or run away.
For a short period of time after the game has released, a special Cyndaquil will be distributed via Mystery Gift. It has "Hisuian energy" and will evolve into Hisuian Typhlosion upon reaching Level 36.
