It doesn't sound empty because it has large, full chords and multiple instruments doing the same part, like the piano and flute playing the same melody when you stand near the flautist, but when you try to distill it to its basics there are only 2-3 things happening in total at any given time, and that causes this cover to feel a bit "empty."

Three things would normally be just fine, Ever Grande only has three things going on and it sounds really great in my opinion put into Crystal's engine, but the bass and guitar parts, for the majority of the song, are chords of short duration, leaving empty spots. The percussion does a good job at covering it up if you aren't specifically listening for it though, and if Anville had percussion it might have turned out better.
