With a gym you can always exit to go heal at a Pokemon center and the continue where you left off whereas with a trial you're locked in to do whole thing or start over from scratch. Unless you use a self imposed rule, trials are more challenging. As for leaders or totems, I'd say totems since those can also be more challenging than leaders too.
