Mostly because many designs are probably made with a cute version and a cool version of a particular idea, and then a middle stage is slapped in-between out of necessity. For Ice I picked Snorunt because there are very few ice types I really like, and Snorunt has a very different color scheme from the usual white and blue that plagues the designs of ice types. Now Anorith and Lileep I picked because they immediately perfect the pokemonization of the species they represent, and the evolutions feel more like an obligation. Especially Anorith, there's no improving on Anomalocarid perfection.
