I can't recommend Pokemon Prism enough. I'm like you in that I just cannot be fucked to do IV/EV training. This game has it all - decent dialogue, very balanced, comfy as fuck, new regions, new mechanics and move types and it's all done really well. Easily my favorite I've ever played.

Super Gold 97 is pretty based too, it's modeled off of the long lost 97 demo of GSC - it feels like a lost game between Gen I and Gen II.
