Of course, it could probably be anything, but I haven't really heard a good reason to discount it from being normal type. The only one I ever here is that it would "defeat the point of Eevee" I have to ask, how so? The point of Eevee is not necessarily to get something totally different, but instead to have a Pokemon with many different options for evolution. Theoretically speaking, if Eevee is eventually going to become all 17 known types at some point in time, Normal would be one of those types. I feel it is not completely outlandish to say that in order to make the evolution more "special" they would make it drastically different from Eevee while still maintaining some stereotypical normal qualities. I'm not saying it definitely will be normal, but don't be so quick to rule out the possibility.
