If you have updated the firmware without using a CFW tool you cannot downgrade to lower firmwares, but at the moment the only use for lower firmwares is booting from completely off to on with CFW working instead of having to inject the CFW payload every time you go from completely off to on. Themes are available to use, but personally I haven't messed with them since I've been fine with just mods and save backups. If your main concern is having a local backup of your save data (which also gives the convenience of multiple save files on one Switch user account) then backing up and reloading files is quick and easy after the long backup of your NAND during the initial CFW setup. Make sure to get at least a 32GB microSD card so it will have enough space to backup the NAND.
