Umbreon. I like creatures that can glow in the dark. Its sprite was kind of creepy looking in gen 2 so that also made me like it. I also like the simplicity of its design. It's just black with some golden rings. The red eyes look great. The shiny looks fantastic, too.
I also enjoy using it in battle. I usually use pokemon who I can just attack with and be done with the battle. You can't do that with Umbreon. It forces me to play differently when I use it. It's my little trump card for when I don't using a particularly strong team in the game.
Runners up are Leafeon an Vaporeon. I love most of the eeveelutions. Those three are at the top, though.
