Saria owns an ice cream stand on Paradise Island and is also a part time gym leader. She uses Grass type Pokemon and when you win she will give you the usual gym-type rewards; no badge though since it's an unofficial gym leader. Her part in the game is pre-first gym leader so her team is pretty easy to beat and her main partner will be a modified Whimsicott.
